A specialty of the Fujian province, China’s famous smoky tea has found many fans in the west. Withered by smoking over pine and cypress fires, leaves are then pressed into wooden barrels and left to oxidize. In the final stage of production, the leaves are hung to dry in baskets over smoldering pine needle fires. Lapsang Souchong develops a unique, malty flavor with a distinctive smoky aroma and taste.
