Categories of Tea

The Short List:
  • White Tea - Generally immature leaves or leaf buds.  High moisture content.  Never
    oxidized.  Very subtle flavor, but high quality leaves that may be infused for extended
    periods to extract more flavor and color.  These teas are considered the most healthful as
    they have been handled the least and are likely to contain an abundance of nutrients
    including antioxidants.
  • Green Tea - These are very lightly oxidized, if at all.  Their aromas and flavors range from
    very light to quite distinct.  These teas can offer a wide range of health benefits, too.  
    Since they are brewed at lower temperatures, they are more likely to retain their
    antioxidants which can be diminished or completely destroyed with very hot water.
  • Oolong and Pouchong - These are partially oxidized and offer a vast mid-range of
    possibilities between green and black teas.  Flavors are generally more robust yet often
    fresh and gentle on the palate.  
  • Black Tea - This represents the category with which most Americans are familiar.  Black
    teas are fully oxidized and create complex flavor profiles.  Many of these teas are
    blended to achieve consistency from year to year.  Some, such as Indian teas, are
    estate grown and their pedigrees add to their appeal.  Often, black teas are scented or
    smoked and served with milk and sweeteners.
  • Puerh - These Chinese teas are fermented.  Traditionally stored in damp, cool caves for
    many years there have been changes in modern production to keep up with world
    demand.  Very old Puerhs are increasing rare and provide a most extraordinary tea
    drinking experience that won't soon be forgotten
  • Herbs and Herb Blends - This final category isn't tea at all, though the term "tea" is
    frequently used to describe them.  They come from many sources with the exception of
    the tea plant, camellia sinensis.

Why do we call this a short list?  Because there are presumably, from a mere mortal's
perspective, an infinite number of teas to choose from.  Not all are easily categorized.  Such is
the lifelong adventure of tea appreciation.
