Tea Storage

Generally speaking, oxidization assists in preserving teas.  Therefore, black teas will have a
longer shelf life than fragile green teas.  An exception to this rule is Puerh.  This tea is aged and
will keep well for many years.  

Purchase your green tea from a reputable tea merchant.  Observe their storage of the tea
leaves.  Reject leaves that may have been exposed excessively to air, such as being stored in
non-airtight canisters.  Once newly acquired green tea is removed from it's airtight package, it is
best to transfer it into a canister constructed specifically for tea storage.  Green tea is best
when consumed regularly and your supply is exhausted quickly.  Purchase only what you might
consume in a two month period.  The quality will surely deteriorate when stored for longer
periods thus producing a disappointing brew.  

Oolongs and Pouchings make up a category of teas that are slightly to moderately oxidized.  
As such, it is much more difficult to speak in generalities.   These teas may keep fresh longer;
perhaps up to four months or more when stored properly.  Black teas will usually retain their
quality for a year or more.

Most varieties, even green teas, may retain freshness for up to a year if vacuum-packed and
stored unopened in a cool, dry place.  That is, never store your tea in the kitchen cabinet over
the stove!

Proper storage of tea will preserve its freshness for as long as possible. Avoid exposing tea to
sunlight, air, moisture, heat and odors.  As such, tea should be stored in a clean, airtight
container that is odor-free.  Like a sponge, tea will absorb odors and aromas.  Among other
things, exposure to cooking odors and incense will affect the flavor of fine teas.  For the same
reason, never store tea in plastic containers.  When handling tea, do so in such a way as to
minimize exposure to sunlight, air and moisture.  The amount of air left inside a canister can
affect the quality and longevity of your tea.  It's best to downsize the storage canister as the
quantity of tea decreases.  

Never freeze or refrigerate tea unless it is vacuum sealed.  Once the vacuum is released, this
type of storage will have a negative effect on the quality of your tea.
